Pecan Pie for Valentine's Day


My husband loves pecan pie. For Valentine's this year I decided to make him a pie. Our oldest son's birthday is on Valentine's Day and my husband was sick. He wanted me to wait to make his pie till he was feeling better. That way he could taste and enjoy it. Last night I made the pie. I decided to take a picture of the pie and post the recipe. Mostly just so I could post something on my blog :). I like to make my food look pretty. Pecan pie is one of my favorite creations, it looks so nice!

Pie Crust
This pie crust has a story. I got the recipe from Kim at ScrapBiz. Follow the link to read the story. Since I started making this pie crust I always have people tell me how good it is. I really love it too!
1lb Butter
8oz pkg cream cheese
3 3/4 cups flour

Mix with a mixer on low. Divide into 6 equal portions (I do about 4, I like a thicker crust). Refridgerate for 15 minutes. Roll out and make pie!

Pecan Pie
1 1/4 cups pecan halves, chop 1 cup arrange 1/4 cup
4 eggs
3/4 cup corn syrup
1 cup brown sugar (for a less rich pie - 1/2 cup brown sugar, 1/2 cup white sugar)
1tsp vanilla
1/4 cup butter melted

Combine eggs, corn syrup, sugar, add butter and vanilla add pecans. Pour into unbaked pie shell. Arrange unchopped pecans on top. Bake at 400 for 10 minutes lower heat to 375 and cook for 30-50 minutes till toothpick comes out clean.
